Butterscotch Thins aka: Nana Cookies

Ingredients

  • 6 oz butterscotch chips

  • 1 cup butter

  • 1½ cups light brown sugar (packed)
    2 eggs

  • 2% cups sifted flour

  • 1½ teaspoons baking soda

  • ½ cup chopped nuts

  • 1½ teaspoons vanilla extract

Instructions

  1. Melt the butterscotch chips and butter in the microwave, heating one minute at a time and stirring until melted. Remove from heat and cool.

  2. Beat in the packed brown sugar and eggs until well combined

  3. Sift Together flour, backing soda. Stir into Butterscotch mixture. Do not over beat.

  4. Add the chopped nuts and vanilla.

  5. Chill well in refrigerator, approx 1 hour.

  6. Roll into two 12 inch rolls.

  7. Chill either over night or up to a week. (You can also freeze the cookies for later)

To Bake

Preheat oven to 375°F and bake for 5-6 minutes, or bake at 350°F for 7-10 minutes until lightly golden.
